Brunswick Stew

Make 4 serves.

Serve with warm biscuits for real down-home taste.


Ingredients:

1 pound boneless, skinless chicken breast,
cubed (1-inch)
1 cup reduced-sodium fat-free chicken broth
1 can (15 ounces) butter beans, rinsed, drained
1 can (141⁄2 ounces) diced tomatoes, undrained
1 cup whole-kernel corn
1⁄2 cup each: chopped onion, green bell pepper
1⁄8–1⁄4 teaspoon crushed red pepper
1⁄2 cup sliced fresh or frozen thawed okra
1–2 tablespoons cornstarch
1/4 cup cold water

Salt and pepper, to taste


Method:
1. Combine all ingredients, except okra, cornstarch, water, salt, and pepper,
in slow cooker; cover and cook on high 4 to 5 hours, adding okra
during last 20 minutes. Stir in combined cornstarch and water, stirring 2 to
3 minutes. Season to taste with salt and pepper.
